Liam has over 30 years experience in the catering industry operating at the very highest level. He was the former Executive Chef/Catering Manager for 11 years of The Fitzpatrick's Silver Springs Hotel in Cork and Executive Chef of The Fitzpatrick Hotel Group for 3 years before purchasing The Brook Inn and taking over the role as Group Managing Director of the Shelbourne Pub Group in 2000
Kieran trained in Hotel Management with The Fitzpatrick Hotel Group, spending 8 years with the Group, managing both The Conference & Banqueting centres in Cork and Bunratty. He then opened and managed The Tralee Court Hotel for 3 years, before teaming up again with Liam at The Shelbourne Pub Group in 2002. Since June 2009 Kieran became General Manager for Brook Catering.

Sharon joined the Shelbourne Pub Group in 2006 as Sales & Marketing Manager, and since June 2006 has been working with Brook Catering. Prior to this she worked with The White Hotel Group for over 4 years in Sales, Marketing and Event planning. She has also spent 2 years with The Rose of Tralee as Marketing Director.

Anthony joined Brook from the award winning Maryborough House hotel and Spa where he was Deputy General Manager. Previous to this he Worked in the Rochestown Park Hotel where he Was a senior manager with a major role in conference and banqueting. Anthony began his career in the Midleton Park hotel under the management Development programme in conjunction with CERT.
